
Bush Honey Macadamia Damper
A rustic Australian damper loaf sweetened with bush honey, studded with macadamias and aromatic wattleseed. Perfect campfire or oven treat served warm with honey butter.

Method
- Preheat oven to 200°C (400°F) and line a baking tray with baking paper.
- In a large bowl, combine self-raising flour, wholemeal flour, ground wattleseed and salt. Rub in the cold butter until the mixture resembles coarse crumbs.
- Stir in chopped roasted macadamias. Make a well in the center; add milk and bush honey. Mix lightly with a knife until a soft dough forms (do not overmix).
- Turn dough onto a floured surface and shape into a round loaf. Place on prepared baking tray and score a cross on top.
- Bake for 30–35 minutes, or until golden and the base sounds hollow when tapped.
- Meanwhile, prepare honey butter: in a small bowl, mix softened unsalted butter with bush honey until smooth.
- Serve the damper warm, sliced and spread with honey butter.
