Bush Honey Macadamia Damper

A rustic Australian damper loaf sweetened with bush honey, studded with macadamias and aromatic wattleseed. Perfect campfire or oven treat served warm with honey butter.

Ingredients
  

  • 2 1/2 cups self-raising flour
  • 1/2 cup wholemeal flour
  • 1 tsp ground wattleseed
  • 1/2 tsp salt
  • 1/2 cup chopped roasted macadamias
  • 2 tbsp bush honey
  • 1 cup milk or plant-based milk
  • 1/4 cup cold butter cubed
Honey Butter (for serving)
  • 50 g unsalted butter softened
  • 2 tbsp bush honey

Method
 

  1. Preheat oven to 200°C (400°F) and line a baking tray with baking paper.
  2. In a large bowl, combine self-raising flour, wholemeal flour, ground wattleseed and salt. Rub in the cold butter until the mixture resembles coarse crumbs.
  3. Stir in chopped roasted macadamias. Make a well in the center; add milk and bush honey. Mix lightly with a knife until a soft dough forms (do not overmix).
  4. Turn dough onto a floured surface and shape into a round loaf. Place on prepared baking tray and score a cross on top.
  5. Bake for 30–35 minutes, or until golden and the base sounds hollow when tapped.
  6. Meanwhile, prepare honey butter: in a small bowl, mix softened unsalted butter with bush honey until smooth.
  7. Serve the damper warm, sliced and spread with honey butter.
